easy MEATBALL LASAGNA

Try a "bumpy" Mom Made spin on homemade lasagna! 

This delicious, saucy lasagna is packed with tasty Mom Made Meatball Bites and can be made ahead of time! 

Prep Time: 20 minutes   

Cook Time: 1 hour  

Total Time: 1 hour 20 minutes 

Yields: 8 servings

Ingredients:

1 (8 oz.) box Mom Made Beef & Cheese Meatball Bites, frozen, cut in half

1 jar (26 oz.) Tomato pasta sauce (any variety)

1 container (15 oz.) Ricotta cheese

1 Egg, beaten

2 Tbsp Fresh basil leaves, chopped (may use dried basil as well)

8 Uncooked lasagna noodles 

3 C Mozzarella cheese (12 oz.), shredded

¼ C Parmesan cheese (1 oz.), shredded

Instructions:

Spray 13x9” (3-quart) baking dish with cooking spray or olive oil. 

In medium bowl, mix ricotta cheese, egg & basil. 

Spoon ½ cup tomato sauce over bottom of baking dish and top with 4 noodles. Top with about half of the ricotta mixture, half of the meatballs, 1 C of tomato sauce and 1 C of the mozzarella cheese. Layer with remaining 4 noodles, remaining ricotta mixture, 1 C of tomato sauce, 1 C mozzarella cheese & remaining meatballs. Sprinkle with remaining 1 C mozzarella cheese and parmesan cheese.

Spray sheet of foil with cooking spray; cover baking dish with foil.

Heat oven to 350°F and bake covered lasagna 45 minutes. Uncover; bake 10 to 20 minutes longer until bubbly, edges are golden brown and cheese is melted. 

Garnish with fresh chopped basil. Let stand 10 minutes before cutting. Freezes well. 

Do Ahead or Delegate:  Cut the meatballs in half. Make ricotta mixture.
Flavor Booster: Add chopped garlic and/or chopped onion to the tomato mix.

Side Dish Suggestion: Serve with a green salad.

Pop'em Meatball Party Appetizer

A bite-size, super easy appetizer that all ages are sure to love!  Everyone will think they're homemade...shhhhhh!

Prep Time : No more than 10 minutes

Yield : Approx 12 (2 Meatballs per person)

Ingredients:

1 (8oz) box of Mom Made Beef & Cheddar Meatball Bites

Low sodium chicken broth or water

2 Tbsp olive oil

Your favorite sauce(s) for dipping (bbq, tomato sauce, teriyaki, mustard, ketchup, etc)

Toothpicks

Instructions:

Prep dipping sauces and serving platter. 10 minutes before you are ready to serve, heat 2 Tbsp of olive oil in sauce pan over medium heat. Add meatballs to olive oil and heat for two minutes while turning meatballs until lightly brown. Add 1 C of water or chicken broth to pan and continue heating over medium heat for 5 minutes or until hot. With a slotted spoon, remove meatballs from pan and place on a plate with dipping sauce. Place a toothpick in each.

Bumpy Bread

Kids love tasty and simple.  That's just what we've got for you today with our Bumpy Bread recipe.  This dish was inspired by the 6-year old daughter of our very own head honcho. Enjoy!

Time: less than 10 Minutes

Yields: 2 Servings

Ingredients:

2 Slices Whole Wheat Bread

6 Mom Made Turkey or Beef & Cheese Meatballs, cut in half

2 Slices Cheddar or American Cheese

Instructions:

Heat Mom Made Meatballs as instructed on box. Cut meatballs in half and lay on two slices of bread. Lay one slice of cheese on top of meatballs on each piece of bread. Melt cheese in oven or toaster over until melted as desired. Serve with your favorite fruit or veggie garnish.

Mom Made Caprese Meatball Skewers

These mini meatball skewers are perfect for summer. Made with fresh basil, mozzarella, olive oil and cherry tomatoes making it an easy dinner, fabulous addition to the picnic basket, party appetizer or potluck barbeque staple.

Ingredients:

  • 1 (8 ounce) package of Mom Made Italian Style Beef Meatball Bites
  • 15 ripe red tomatoes
  • 15 ripe yellow tomatoes
  • 15 small fresh mozzarella balls
  • 15 basil leaves
  • 15 small wooden skewers
  • 3 tablespoon Olive oil
  • 1 tablespoon Balsamic vinegar
  • Dash of kosher salt
  1. In a large microwavable bowl, heat the Mom Made Meatballs according to directions on the box.
  2. Assemble tomatoes, basil, mozzarella bites and Meatball Bites on a skewer.
  3. Drizzle them with olive oil and balsamic vinegar. Add a pinch of kosher salt
  4. Serve warm, cold or room temperature.

Hawaiian Meatball Skewers

Frozen meatballs never looked so yummy!

Looking for a tasty summer meal?  Look no further, we've got a Hawaiian Meatball recipe you'll make again and again!

Prep Time: 10 Minutes       Cook Time: 12-15 Minutes       Total Time: 25 Minutes

Yields: 4 Servings

Ingredients:

  • 6 (8 oz.) boxes Mom Made Chicken and Apple Meatball Bites
  • 1 cup Pineapple, chopped into 1/2" cubes (as desired)
  • 2/3 cup Pineapple Juice
  • 1 Tbsp. Water
  • 1/3 cup Brown Sugar
  • 3 Tbsp. Cornstarch
  • 1/3 cup Rice Vinegar
  • 2 Tbsp. Soy Sauce
  • 3 Tbsp. Tomato Paste
  • 1/4 tsp. Cayenne (as desired)

Directions:

In a small bowl, whisk together cornstarch and water to make a slurry, set aside

In a medium saucepan, combine pineapple juice, rice vinegar, brown sugar, tomato paste, soy sauce and cayenne (if using) ~ bring to a boil over medium heat

Stir in cornstarch slurry and cook until thickened, about 1-2 minutes

Remove from heat and use immediately, or store in an airtight container in the refrigerator for up to two weeks

In a large saucepan, combine cooked sauce, pineapple, and Mom Made Chicken Apple Meatball Bites; heat gently until hot, approximately 5-6 minutes

Serve with white steamed rice and cucumber slices or on skewers (as pictured)

RECIPE: Peachy Salmon

Heather, our founder, made this delicious meal on TLC a while back. The recipe is simple, easy and healthy and perfect for a summer meal. 

Peachy Salmon

Prep Time: Max. 10 minutes

Cook Time: 10-15 minutes

Serves 4-6

Ingredients:

  • 2 lbs of fresh salmon

  • Four fresh peaches

  • 1 Tbsp rice vinegar

  • 2 Tbsp honey

  • 1 Tbsp olive oil

  • Dash of sea salt

Directions:

  • Pre-heat oven to 350 degrees F.

  • Peel and slice peaches, place in a baking dish around the salmon.

  • In a separate bowl, combine rice vinegar, honey, olive oil and salt, and top salmon and peaches with sauce.

  • Bake for 10-15 minutes (until the fish flakes when poked with a fork).

Serve this with your favorite sides or try it with the healthy sides that Mom Made Founder, Heather, made. Enjoy!

RECIPE: Sautéed Green Beans and Yellow Squash

Need a colorful, healthy side recipe made with fresh produce from the farmer's market? It goes REALLY well with Hot Meatball Subs for a simple dinner. 

Sautéed Green Beans and Yellow Squash

Ingredients:

  • Fresh yellow squash, 2-3, large

  • Fresh string beans, 2 handfuls

  • 1 Tbsp olive oil

  • Dash of sea salt

  • Garlic clove, pressed or diced

Directions:

  • Wash and chop the squash and green beans.

  • Add olive oil to sauce pan over medium heat. Add fresh garlic and cook for 1 minute.

  • Add squash and green beans and cook for 5-8 minutes until beans are bright green and squash is tender.

  • Add salt and pepper to taste.

Zoodles and Meatballs

Mom Made's dishing out our Top 10 Favorite recipes to put on your dinner table! We've teamed up with Cucina Antica to bring you this fabulous zoodles recipe! Prep Time: 10 minutes

Cook Time: 20 minutes

Serves: 4

Ingredients:

Sauce:

Zoodles:

  • 2 tablespoons of olive oil
  • 6 medium zucchini, spiralized
  • 2 medium carrots, spiralized

Directions:              

  • For the sauce, place Cucina Antica sauce and Mom Made meatballs in a saucepan and simmer 15-20 minutes.
  • For the zoodles, add the olive oil, zucchini, and carrot pasta in a separate saucepan and sauté for 5 - 10 minutes, until desired tenderness is achieved.
  • Separate pasta on four separate plates and top with sauce and meatballs. Enjoy!

Notes: Fresh zucchini will often lose moisture as the zucchini pasta cooks so be sure to drain any liquid that has built up in the pan. The recipe serves well as a leftover, but be sure to drain any excess moisture released by the zucchini before serving again.

3 Healthy and Easy Appetizer Recipes with Meatballs

Having friends over to watch the Final Four or hosting a party soon? Here are three ways you can create healthy finger foods with meatballs:

1. Mini Meatball Grinders. Place Mom Made Turkey Meatballs on a small bun with marinara sauce and hold it together with a toothpick. Make them a little fancier by adding a slice of fresh mozzarella and a sprig of fresh basil.

2. Meatball Taco Bites. Heat Mom Made Beef & Cheese Meatballs according to directions. Lay out scoop chips on serving platter and place a pinch of chopped lettuce into each. Add a meatball on top of the lettuce in each chip. Top them with a pinch of shredded cheddar and a bit of salsa. Simple and fast!

3. Asian Meatballs. Combine 2/3 cup hoisin sauce, 1/4 cup seasoned rice vinegar, 2 garlic cloves (minced), 2 Tbsp. soy sauce, and 1 tsp. sesame oil. Whisk together all these ingredients. CookMom Made Turkey Meatballs according to directions and dip each meatball individually with a toothpick into the Asian sauce. Sprinkle toasted sesame seeds on top along with fresh chopped chives. (as seen in "gimme me some oven")

Mumbai Meatballs with Chutney-Yogurt Dipping Sauce

From our friends at The Six O'Clock Scramble

This quick and easy favorite has an Indian twist
Prep Time: 10 minutes    Cook Time: 5 minutes   Total Time: 15 minutes

1 (8 oz) box of Mom Made's antibiotic-free Chicken & Apple Meatball Bites
¼ cup of broth (optional)
1/2 cup plain nonfat yogurt
1/4 - 1/2 cup mango chutney or any variety, or use apricot jam and add some red pepper flakes if you can’t find chutney, to taste

Arrange meatballs in a microwave safe dish with water or broth. Cover and heat in microwave on high for 60 seconds, or until hot. Let stand 1 minute before serving.

Mix plain yogurt and chutney, or apricot jam with added red pepper flakes in a small bowl. 

Serve the Mom Made Foods Chicken & Apple meatballs with toothpicks, if desired (don’t give toothpicks to children under 3), and the chutney-yogurt dipping sauce.

Do Ahead or Delegate: Prepare the dipping sauce and refrigerate.

Scramble Flavor Booster: Add both chopped cilantro and lemon juice to the dipping sauce.   

Side Dish Suggestion: Serve with steamed basmati rice and sliced cucumbers.

Hot Meatball Subs

From our friends at The Six O'Clock Scramble

Fun and familiar kid pleasing recipe for the whole family
Prep + Cook Time: 25  minutes

1 Tbsp. extra virgin olive oil
1 large yellow onion, peeled, halved and sliced into half rings
1 large green or red bell pepper, sliced
26 oz. red pasta sauce or tomato sauce
2 (8 oz) boxes of Mom Made's antibiotic-free Beef & Cheese Meatball Bites
6 small oblong soft French bread sandwich rolls, use whole wheat rolls for added nutrition
4 oz. sliced or shredded provolone or mozzarella cheese

Preheat broiler and line a baking sheet with foil.  In a large heavy skillet, heat oil over medium heat add sliced onions and bell pepper half rings cook, stirring occasionally, until browned and soft, 15 - 20 minutes. Season as needed with salt & pepper. Meanwhile, in a medium saucepan, heat sauce over medium to medium-high heat.  Add Mom Made Beef & Cheese Meatball Bites and simmer gently for 10 - 15 minutes. 


Carefully cut along the length of each sandwich roll, trying to avoid slicing all the way through so the halves remain attached.  Put several cooked meatballs and some sauce inside each roll and top with cooked onions, peppers and cheese.  Put the sandwiches on the baking sheet, with fillings facing up, and broil for 2 - 3 minutes until the cheese is melted and the rolls are slightly browned.  Serve them hot.

Do Ahead or Delegate: Slice the onion and the bell pepper.

Scramble Flavor Booster: Sprinkle the baked sandwiches with crushed red pepper flakes or hot pepper sauce, such as Tabasco, for a spicy bite and sprinkle with grated parmesan for added flavor.

Asian Turkey Meatballs

Serves: 4
Prep Time: 5 minutes
Cook Time: 2 minutes
Ingredients:

  • 1 (8 oz) box Mom Made Turkey Meatball bites
  • 2 Tbsp. Brown Sugar
  • 3  Tbsp. Lower-Sodium Soy Sauce
  • 2 Tbsp. Sesame Oil
  • 1 Tbsp. Chili Paste
  • 6 Garlic Cloves (finely minced)
  • 3 Tbsp. Sesame Seeds
  • 1/3 Cup Green Onions (minced for garnish)

Instructions:

  • Combine brown sugar, soy sauce, sesame oil, chili paste and garlic for the sauce in a medium mixing bowl. Set aside the sesame seeds and green onion.
  • Place Mom Made Turkey Meatball bites in the microwave on high for 60 seconds.
  • Coat meatballs with sauce mixture and sprinkle with sesame seeds.
  • Garnish with green onions. Serve with toothpicks.

Breakfast Casserole Muffins

Servings: 12 Muffins

Ingredients

  • ¾ cup of shredded hash browns
  • 6 eggs
  • 1/4 cup milk
  • 3/4 cup of shredded cheddar cheese
  • ½ cup of green onion, finely chopped
  • 16 Mom Made Foods Beef & Cheese Meatball Bites

Directions

  1. Preheat oven to 350 degrees. Grease 24 muffin pan well.
  2. Microwave Mom Made Foods Beef & Cheese Meatball Bites according to package instructions. Allow meatballs to cool, then slice into quarters and set aside.
  3. Beat eggs in mixing bowl.
  4. Add shredded hash browns, meatballs, green onions and shredded cheese. Stir to mix.
  5. Scoop egg mixture into muffin pan.
  6. Bake for 25-30 minutes or until “muffins” are set. Serve immediately. Or, let cool and freeze for quick breakfasts all week!
  7. To reheat frozen muffins, microwave on high for one minute.

Ingredients

  • 1 (8 oz) box Mom Made Beef & Cheese Meatball Bites
  • 12 6 inch Corn Tortillas
  • Olive Oil non-stick cooking spray
  • 2-3 cups Shredded Cheddar/Jack Cheese Blend
  • 1 bottle Sky Valley Enchilada Sauce

Directions

  • Combine meatballs with 1 cup of the shredded cheese.
  • Spread ½ cup of the enchilada sauce over bottom of baking dish.
  • Spray each tortilla with olive oil non-stick spray
  • Fill each with about 1/3 cup of the meatball/cheese mixture.
  • Roll each tortilla up tightly with mixture in the middle and place in baking dish, seamed side down.
  • Squeeze remaining enchilada sauce out of bottle onto rolled enchiladas.
  • Sprinkle dish with remaining cheese.
  • In 375 degree oven, bake casserole for 15 to 20 minutes or until cheese is bubbly and melted on top.

  • 1 bag your Choice of Salad Mix
  • 1 cup of Cherry Tomatoes
  • 1 cup of Carrots (chopped)
  • 1 cup of Red Peppers (sliced)

Almond Butter Salad Dressing:

  • 1/2 cup Justin's Classic Almond Butter
  • 1/8 cup Tamari (or Soy Sauce)
  • 1 tsp. Fresh Grated Ginger
  • 1 clove Minced Garlic
  • 2/3 cup Lemon Juice
  • 2 tsp. Canola Oil
  • 1 tbsp Honey
  • 1/4 cup Water
  • 1/2 tsp. Salt

Directions:

Ingredients:

  • 1 (8 oz) box of Mom Made Turkey Meatball Bites
  • 3 tbsp of Justin’s Classic Almond Butter
  • 1 can of Garbanzo beans
  • 1 tsp of Cumin
  • 2 tsp of Oil
  • 1 cup of Water
  • 1 tsp of Lemon juice
  • 1/4 tsp of Salt
  • 4 Whole Wheat Tortilla Wraps
  • Lettuce
  • 1 Cucumber (thinly sliced)
  • 1/4 cup of Feta Cheese

Directions:

  • Place Mom Made Turkey Meatballs in the microwave on high for 60 seconds.
  • Rinse and drain can of garbanzo beans.
  • Place garbanzo beans, almond butter, cumin, lemon juice, oil , water and salt in blender until mixed.
  • Spread hummus on tortillas.
  • Layer lettuce, feta, cucumbers and meatballs.

Easy Mini Meatball Pizzas with Cucina Antica

Time: 15 minutesmini pizzas

Ingredients:

  • 1 (8 oz) box of Mom Made Food’s Italian Style Beef Meatball Bites
  • 1 six-pack of English muffins
  • 1 jar 16 oz Cucina Antica® La Pizza Sauce
  • 1 package 8 oz shredded part skim mozzarella
  • Your favorite toppings

Preparation:

  • Preheat oven to 400° F.
  • Separate the 6 English muffins so that there are 12 halves.
  • Generously spoon Cucina Antica® La Pizza Sauce over the top of each half.
  • Add mozzarella cheese and any other toppings you desire on top.
  • Put in oven for 8-12 minutes or until cheese is melted and English muffins are toasted.
