Mom Made Rainbow Salad

Mom Made's dishing out our top 10 Favorite recipes to put on your dinner table! We've teamed up with Justin's to bring you this delicious and quick Rainbow Salad recipe.

Serves: 4

Time: 5 minutes

Ingredients:

Salad:

  • 1 (8 oz) box Mom Made Italian Style Beef Meatball Bites
  • 1 bag your Choice of Salad Mix
  • 1 cup of Cherry Tomatoes
  • 1 cup of Carrots (chopped)
  • 1 cup of Red Peppers (sliced)
  • 1 cup of Cucumbers (sliced)

Almond Butter Salad Dressing:

  • 1/2 cup Justin's Classic Almond Butter
  • 1/8 cup Tamari (or Soy Sauce)
  • 1 tsp. Fresh Grated Ginger
  • 1 clove Minced Garlic
  • 2/3 cup Lemon Juice
  • 2 tsp. Canola Oil
  • 1 tbsp Honey
  • 1/4 cup Water
  • 1/2 tsp. Salt
  • 1/4 tsp. Black Pepper

Directions:

  • Place Mom Made Italian Style Beef Meatballs in the microwave on high for 60 seconds.
  • Cut up carrots, peppers and cucumbers.
  • Whisk all salad dressing ingredients in a medium mixing bowl.
  • Toss all ingredients in a bowl and serve.

Sticky BBQ Turkey Meatball Sliders with Cheesy Mac

When you need to make dinner but don't want to be stuck in the kitchen on a hot summer day, try Mom Made Foods' Sticky BBQ Turkey Meatball recipe. This is a dinner you can make in a matter of minutes for your hungry kiddos. Add our delicious and nutritious Cheesy Mac as a side to bring the whole dish together.

Prep Time: 5 minutes

Cook Time: 10 minutes

Serves: 4

Ingredients:

Sliders:

  • 1 box of Mom Made Turkey Meatballs
  • ¾ cup of BBQ sauce
  • ¾ cup of Organic Brown Sugar
  • ¼ cup of ketchup
  • 8 Whole Wheat Slider Buns

Side:

  • 2 boxes of Mom Made Cheesy Mac

Directions:

  • Place Mom Made Turkey Meatballs in the microwave on high for 60 seconds.
  • Mix BBQ sauce, organic brown sugar, and ketchup in a medium mixing bowl.
  • Place sauce mixture in the microwave on high for 60 seconds.
  • Coat meatballs in sauce mixture.
  • Place three meatballs on each whole wheat slider bun.
  • Puncture 3 small holes in overwrap of each box of Mom Made Cheesy.
  • Place Cheesy Mac in the microwave on high for two minutes.
  • Stir and reheat for one minute.
  • Place two turkey meatball sliders and ½ a container of Mom Made Cheesy Mac on each plate.
  • Serve hot and enjoy!

Tell us about your family: I live in a two story tan shingled house with three wonderful beings!  My husband,lucyheadshot my 10 year old son, and our very sweet dog.  Each of us, including the dog, likes being together as a family.  Of course, we also spend lots of time apart -- at school, work, travel, and doggie daycare!  We like being out in the world, learning and doing things.  We love our friends and extended family.  And then, we love being home again -- together.

My company is "Lucy's".  I make delicious, high quality, gluten free, non-GMO, food allergy friendly cookies.  You'll find them in stores throughout the U.S. and Canada.  Also, look for them in the U.K. and Mexico!

Mom Made Meatball Kabob Recipe

We're so excited to see our brand new product, Mom Made's Chicken & Apple Meatball Bites, featured in this month's "Every Day with Rachael Ray" magazine! There are so many fun and delicious ways to use these in making a healthy dinner. Here's one of our favorite recipes...Mom Made Meatball Kabobs, a meal on-a-stick the whole family will enjoy! Prep Time - 10 min Cook Time - 2 min...no kidding!

Serves 4

Ingredients:

  • 1 box of Mom Made's antibiotic-free RachaelRay - Chicken Apple MeatballsChicken & Apple Meatballs (8oz)
  • 2C low sodium chicken broth
  • 1 yellow bell pepper, washed and cut into 1" squares
  • 1 green bell pepper, washed and cut into 1" squares
  • 1 box of cherry tomatoes
  • 1C cheddar cheese, cut into 1/2" cubes
  • 1C pineapple, cut into 1/2" cubes
  • Wooden skewers

Heat the meatballs in low sodium chicken broth according to directions on the box.

Place meatballs, cheese cubes, bell peppers and pineapple on skewers. Serve with your favorite rice and dipping sauce, e.g. ranch, bbq, sweet & sour.

Family Tip: It's fun to have the kids make their own and challenge them to include as many colors on their kabob as they can.

Optional: Make the kabobs without the cheese. Grill then add the cheese cubes to each end.
